Theย recent, very vicious hailstorm we sufferedย here in the north part ofย the city a couple of evenings ago, and theย heat (long overdue!)ย that has followedย hasย ended theย bloom period of the wild roses (Alberta’s provincial flower,ย Rosa acicularis), which shine in the cooler, wetter days of June.ย ย Last weekend, before all theย crazy weather hit,ย ย I decided it was time to finally try making wild rose petal jelly.ย It’s beenย high on the list of my canning priorities for quite awhile, but, for one reason or another during the past few summers,ย I’ve missed the windowย for gathering fresh, dark, fragrantย petals.ย ย ย A short early morning hike in a nearby wooded area and a quick trip to the grocery store to pick up some liquid pectin, and I was ready to go!
I used this super-simpleย recipe from the blog Wood Ridge Homestead in the Shenandoah Valley,ย ย and the results were supremely delicious!ย (I wouldย recommendย skimming the batch before putting it into the jarsย toย make sure yourย jelly is as clear as possible).
Biscuits and tea and roses, anyone?ย ย One taste of thisย delightful summer treatย and it will make you forget that your veggies in the community garden plot are now hail-hammered mulch!ย (Well, perhaps not…but I have more seed and time enough to plantย more cropsย – and toย plan a system forย covering my plants in the future).ย ๐
